Not contamination - an overgrowth of mycelium that forms a dense mat blocking pin formation. Caused by environmental conditions.

What It Looks Like

Thick white mycelial mat over casing, prevents pins from forming, looks healthy but too thick

Recommended Action

Gently scratch/score the overlay with sterile fork. Increase FAE. Cold shock may help. Reduce CO2 levels. Usually recoverable.

How to Identify
  • 1Thick mat of healthy-looking white mycelium
  • 2Covers casing surface completely
  • 3No pins can break through
  • 4No off-colors or smells
  • 5Looks almost like leather
Common Causes
  • Too much CO2 during casing colonization
  • Casing layer too thin
  • Temperature too warm during casing run
  • Premature exposure to fruiting conditions
Prevention Tips
  • Maintain proper FAE during casing colonization
  • Adequate casing layer depth
  • Proper temperature control
  • Wait for proper colonization before fruiting
